Eggs are totally optional, but A loves the runny eggs in his fried rice so I usually put 2-3 eggs in (Top left). Beat it until it is even/smooth. Today, I was feeling lazy so I didn't chop up the garlics. Pulse the garlic in the food processor until desired fineness is achieved (Top Right). Heat your wok/cast iron up with oil (medium to high heat). Once the oil is hot, dump in your garlic and stir fry until the fragrance is out. Then you can put in the chicken about ~500g. Cook until the minced chicken is cooked thoroughly (Right). Put in the cabbage and then the rice. Add more olive oil/sesame oil. Stir until even. Add in the kimchi (from Isetan). Stir until even again.
*I like Isetan's kimchi. Other places' kimchi are all slightly too sour for my taste. Put in the eggs. Try to cover the eggs with rice. Now cover the cast iron, turn down the heat, and wait for 5-10 minutes. If the pot is hot enough, you can just turn off the stove. The eggs will still cook. *Usually you can use this time to do dishes while you wait for the eggs to cook. Salt to your taste. Serve with green garnishes. If you have chives, you can sprinkle some chives over the kimchi fried rice. |
