Hakata style ramen = bouncy and firm skinny noodles. I prefer the Hakata style ramen over the normal curly ramen any day. Ippudo has many branches all over Singapore, Japan, Taipei, and even New York. We have tried out Ippudo Taipei last December. The overall noodle quality was not that great and the broth is slightly saltier and thicker (not authentic enough). Another branch that we frequently visited is Ippudo Tao @ UE Square in Singapore. The queue is definitely shorter there but the menu is very different. They have a wider ranger of spicy ramen. My/my parents' favorite is still Ippudo @ Mandarin Gallery. Karaka-Men $18This is not my usual order. I usually go for Shiromaru Motoaji. It is their original tonkotsu broth served with thin noodles, pork loin, cabbage, black fungus and spring onions. Today, I tried the special spicy miso which is slightly on the salty side. I had to add in some water to balance out the broth. I prefer a lighter broth so the classic Hakata ramen is more suitable for me. Ippudo has never failed to fill an hungry soul on a hump day or TGIF.
